Going along with a healthier eating theme, I'm trying to eat more fruits and veggies.  It's hard to keep things interesting and not just want to go out to eat, but I'm trying.  I have some dried black beans and sweet potatoes so here's the recipe I'll be cooking tonight.  It was first prepared for me by a friend when one of my kids was born.  Thanks, Mel, for the recipe!

1 Tbs vegetable oil
1 onion, chopped
4 cloves garlic, minced
6 cups kidney or black beans, drained
2 cups water
3 Tbs chili powder
2 tsp ground cumin
4 tsp prepared mustard
1 pinch cayenne pepper
3 Tbs soy sauce
4 cups cooked mashed sweet potatoes
12 ten-inch flour tortillas, warmed in microwave using a damp paper-towel-lined plate
8 oz shredded cheddar cheese

Preheat oven to 350.


Heat oil in skillet and sauté onion and garlic over medium heat until
onions are translucent. Stir in beans and mash. Gradually stir in
water and sweet potatoes and heat until warm (you may need to add a
little more water, depending on the consistency). Remove from heat and
stir in spices, mustard and soy sauce. Put generous amount of bean
mixture into warm tortilla and sprinkle with cheese. Roll tortilla and
place in baking dish. Sprinkle rolled tortillas with cheese. Bake for
10 to 15 minutes. Serve w/ sour cream, salsa or guacamole.
